Confession time! I love Christmas... Movies, music, books... You name it. The Hallmark Channel has already started showing Christmas movies. Yes, I have watched several of them. And it's not even half way through November!

Welcome back to the world of Lori Wilde! That should be shouted from the rooftops when you start reading one of her books. She can create a wonderful small town filled with kooky, heartwarming characters. This time we've visiting Twilight, Texas. It is a small town that thrives off its romantic history. When you live there, you can't help but fall under the spell. When you visit there through a book, you wish the place existed so you picture it in your mind. I adored these four short novellas. They were full of the magic that makes Christmas romance special. Its a time where anything is possible. Lori captured that feeling perfectly in the stories of Carrie, Raylene, Christine, and Grace. Each is proof that a second chance at romance is something that should be grasped and never let go. I absolutely adored the novellas. I do wish that they were a bit longer just because I felt the stories were so special, I wanted to keep reading. Each novella was wonderfully written and the characters were so loveable, they'll put anyone into the magical Christmas spirit.

And yes, I was naughty and read these novellas before reading the Twilight, Texas series. Don't tell Santa...

A Special Cookie Recipe from Jennifer Bernard!
 
My husband can’t eat any dairy, so I’m always searching for butter-free recipes. If I find one that also satisfies my sweet tooth without refined sugar, I’m in heaven. These peanut butter cookies are the perfect answer. They’re so rich and moist and delicious. The spelt flour gives them extra protein. They’re not exactly low-calorie, but worth every bite. Even my 9-year old sugar addict daughter loves them.  The recipe is from Oh She Glows, a vegan website. Give them a try, you might be surprised by how fabulously sinful they taste! 

Aunt Angie’s Soft Peanut Butter Cookies

2 cups spelt flour (or all-purpose or whole wheat pastry flour)
1 tsp baking soda
3/4 tsp kosher salt
1 cup peanut butter 
3/4 cup pure maple syrup
1.5 tsp vanilla extract 
Turbinado sugar & kosher salt, for sprinkling on cookie before baking (optional)
Almond milk for dipping 

Directions: Preheat oven to 350F degrees. In a medium mixing bowl mix the flour, baking soda, and salt. in a large bowl combine the peanut butter, maple syrup, and vanilla. If you can, use the oil that collects at the top of the peanut butter jar. If you need more oil, add a few tablespoons of olive oil or coconut oil. Stir until combined. Pour the flour mixture over the peanut butter mixture and mix. Shape the batter into balls then wet a fork and press down onto the cookie crosswise – just like regular peanut butter cookies. Sprinkle with turbinado sugar and kosher salt. Bake for 11 minutes at 350F and let cool for 5 minutes.
